This is tasty and filling. It's nice to have a colorful salad on top the casserole. It dresses it nicely and adds so much to the flavor. I've been making this recipe for about 40 years ... a family favorite!

Ingredients For beef nacho casserole

  • 1 lb
    ground beef
  • 12 oz
    chunky salsa (i use mild pace)
  • 3/4 c
    miracle whip
  • 1 c
    corn
  • 1 Tbsp
    chili powder
  • 2 c
    crushed tortilla chips, divided
  • 2 c
    colby jack cheese, divided

How To Make beef nacho casserole

  • 1
    Preheat oven to 350°. Brown ground beef, drain
  • 2
    Add salsa, miracle whip, chili powder, and corn
  • 3
    Spray Pam in 2qt casserole dish.
  • 4
    Layer casserole with 1/2 meat mixture, chips, and cheese twice.

    Cook 20 minutes.
  • 6
    Chop lettuce, tomatoes, green onions and top casserole. Add sliced black olives.
