Dad always said, you have to make a roux for the best cheese sauces. I think he was right and always try to make mac and cheese the good old fashioned way. It is worth the extra effort.

Ingredients For baked mac and ham

  • SAUCE
  • 4 Tbsp
    butter
  • 5 Tbsp
    all purpose flour
  • 3 c
    3% milk
  • 1/2 tsp
    dry mustard
  • 1 pinch
    freshly grated nutmeg
  • 1/2 tsp
    salt
  • 1/4 tsp
    cayenne pepper
  • MACARONI
  • 2 c
    elbow macaroni, cooked
  • 2 c
    leftover ham, diced
  • 1/2 sm
    sweet onion, thinly sliced
  • 1/2 c
    frozen baby peas
  • 2 c
    extra aged cheddar cheese, diced
  • 1/4 c
    mozzarella or Parmesan cheese, shredded
  • 3/4 c
    artisan bread, cubed
  • 2 1/2 Tbsp
    butter, melted

How To Make baked mac and ham

    Preheat oven to 375 degrees F.

    To make the sauce, melt the butter over medium heat, add the flour and cook briefly while stirring, until slightly golden in colour. Slowly add the milk to the flour and butter mixture; cook while whisking until the sauce starts to thicken. Add the dry mustard, nutmeg, salt and cayenne pepper; mixing well. Let cook for 2 minutes more.

    In a large bowl, add the noodles, ham, onions and peas, mixing well. Add half this mixture to a 9 x 13" pan then layer with half the diced cheese and half the sauce. Repeat. Top with shredded cheese, add the bread cubes and drizzle with the melted butter. Bake for 20 minutes. Cover loosely with tinfoil to keep the bread from getting too brown, and bake 20 minutes more, or until golden brown and bubbling.
