baked eggplant casserole w/cheese & sausage
I created this dish from Eggplant that was about to spoil. My inspiration for the spices came from the Oscar Mayer Natural Sausage that was used in the recipe, which had basil, oregano, & garlic in it. The spices certainly did elevate the flavor in the casserole, and the variety of cheeses helped to make this a complete meal in one. We loved the dish and my husband had several servings. It really does have great flavor, and can be put together with very little time. Hope you give it a try soon.

Ingredients For baked eggplant casserole w/cheese & sausage

6 ceggplant peeled & cubed

2 mdyellow onions, chopped

6 clovegarlic, minced or chopped

2 cchopped broccoli, i used frozen but thawed

1 candiced tomatoes, drained

1 pkgoscar mayer selects natural sausage, sliced on bias

1 1/2 tspeach dried sweet basil & oregano

1/2 tspdried thyme
-
2 tspgranulated garlic

1 tspstonemill steak seasoning

1 1/2 cshredded mozzarella cheese, divided
-
1/2 cfancy shredded parmesan cheese

1/2 cfinely shredded cheddar cheese

3 Tbspolive oil, extra virgin
How To Make baked eggplant casserole w/cheese & sausage

1PREHEAT OVEN TO 350 DEGREES F.These are the 3 cheeses that I used. Spray a 9X10 casserole dish with nonstick cooking spray, & set aside till needed.

2These are the spices that I used. Nutritional Info was calculated using MY FITNESS PAL. This recipe should make 8 average servings and has 347 calories. Fat 22 g, Cholesterol 50Mg, Sodium 946Mg, Potassium 416Mg, Carbohydrates 19g, Fiber 5g, Sugars 7g, & Protein 20g, Net carbs is 14g per serving.

3I chopped the eggplant by hand, but used the food processor to chop the onion and garlic.

4Heat the oil in large skillet, add chopped onion & garlic, cubed eggplant, & chopped broccoli.Saute until tender.

5Add in the drained diced tomatoes, and smoked sausage, continue cooking & stir, add in the spices, and stir to blend together.

6Remove from heat, and add in 1 cup of shredded mozzarella, and half cup of shredded parmesan, and stir until cheese melts.

7Pour mixture into prepared casserole dish. Add the remaining cheeses on top in desired patter of choice.

8Place dish is preheated 350 degree oven and bake for 30 minutes till hot and bubbly around edges and cheeses has melted. Remove from oven, and serve as desired.
