When my daughter was very young, we joined a group called MOPS (Mothers of pre-schoolers) so she could socialize with other children, and I had some mommy time with other moms of preschoolers. We usually had food at the meetings. This was served at the first one we went to in May 99 (my daughter was born in Jan 99). This was incredibly good!

Ingredients For baked chicken "salad" casserole

  • 2 c
    diced cooked chicken
  • 3/4 c
    mayo
  • 1 c
    diced celery
  • 1 Tbsp
    lemon juice
  • 1 can
    cream of chicken soup
  • 1/2 c
    diced onion
  • 1/2 c
    sliced almonds
  • 3
    hard boiled eggs, peeled and chopped
  • 1 c
    grated cheese
  • 1 c
    crushed potato chips

How To Make baked chicken "salad" casserole

  • 1
    Combine all but cheese and chips. Blend and place in oblong baking dish. Sprinkle with cheese and chips. Bake 30 min at 400 degrees. Let stand 15 min before serving.
