Ingredients For southwest tuna burgers

  • 2 can
    (7 oz. each) solid white albacore tuna, drained and flaked
  • 2 lg
    eggs, lightly beaten
  • 1/2 c
    crushed tortilla chips (white or yellow corn)
  • 1/4 c
    chopped fresh cilantro
  • 1/4 c
    finely diced red bell pepper (seeded)
  • 1 Tbsp
    lemon juice
  • 1 Tbsp
    taco seasoning mix
  • 1/4 c
    vegetable oil
  • 4
    hamburger buns, toasted
  • 1 c
    shredded lettuce
  • 1/4 c
    mayonnaise, optional
  • 1/4 c
    salsa

How To Make southwest tuna burgers

  • 1
    In a large bowl, combine tuna, eggs, tortilla chips, cilantro, bell pepper, lemon juice and taco seasoning. Stir well. Refrigerate for 1 hour (this makes it easier to form patties). Shape into 4 patties.

    Heat oil in a large skillet over medium heat. Add patties and and cook 3 minutes on each side, or until golden brown.

    Serve on buns with shredded lettuce, mayo and salsa.
