Ingredients For southwest tuna burgers

2 can(7 oz. each) solid white albacore tuna, drained and flaked

2 lgeggs, lightly beaten

1/2 ccrushed tortilla chips (white or yellow corn)

1/4 cchopped fresh cilantro
-
1/4 cfinely diced red bell pepper (seeded)

1 Tbsplemon juice
-
1 Tbsptaco seasoning mix

1/4 cvegetable oil
-
4hamburger buns, toasted
-
1 cshredded lettuce
-
1/4 cmayonnaise, optional

1/4 csalsa
How To Make southwest tuna burgers

1In a large bowl, combine tuna, eggs, tortilla chips, cilantro, bell pepper, lemon juice and taco seasoning. Stir well. Refrigerate for 1 hour (this makes it easier to form patties). Shape into 4 patties.

2Heat oil in a large skillet over medium heat. Add patties and and cook 3 minutes on each side, or until golden brown.

3Serve on buns with shredded lettuce, mayo and salsa.
