This tasty burger is a big hit with my adult children! It is a fun item for a backyard BBQ or fiesta that people will be begging for more. The flavor EXPLODES in your mouth with every bite. Serve with some sliced avocado, chipotle aioli or guacamole to add another layer of creaminess to the burger. These are phenomenal!!! ENJOY!

The concept of using quesadillas as a bun is genius. They add a cheesy crunch to the delicious burger. The meat itself is moist and full of taco flavor. The fresh pico on top is a burst of flavor while the ooey gooey pepper jack cheese is perfection. These are definitely decadent... and delicious!

Ingredients For quesadilla burgers
- PICO DE GALLO

3diced roma tomatoes
-
1/2 tspkosher salt
-
3chopped green onions
-
1/4diced white onion
-
juice of 1 lime
-
1 cchopped cilantro
-
1jalapeno, chopped finely
- BURGERS
-
2 lbground beef (or turkey)

1 pkgtaco seasoning mix
-
1/2 tsponion powder
-
1/2 tspblack pepper
-
1/2 tspcumin
-
1/2 tspkosher salt
- OTHER INGREDIENTS

16mini flour tortillas
-
1 pkgshredded cheddar or fiesta blend

1 pkgpepper jack slices
How To Make quesadilla burgers

1Mix up all ingredients for Pico De Gallo and set aside.

2Mix up all ingredients for burgers and set aside.

3Butter one side of each tortilla. Place butter side down in a pan on low heat. Sprinkle a layer of the shredded cheese on the tortilla and the place another tortilla butter face up on top. Brown the tortilla and melt the cheese on one side, then flip and brown the other side (like a grilled cheese). Make 8 quesadillas.

4Divide burger into 4 balls (1/2 pound burgers). Press out burgers about 6-7 inches to allow for shrinking and press a thumbprint into the center of the burger.

5Fry or grill burgers to your desired temp.

6Place 2 slices of pepper jack cheese on each burger and let melt. Place a heaping pile of Pico De Gallo on burger and place burgers in between quesadillas. Enjoy!
