papa’s favorite hamburger
The idea for this recipe came from an old letter written by Ernest Hemingway that was found recently in Havana at his home by the JFK Library in Boston. I have modernized the recipe and cooked it often to the delight of my quests.

1Break up the meat with a fork and scatter the garlic, onion and dry seasonings over it, then mix them into the meat with a fork or your fingers. Add the relish, capers, everything else including wine and let the meat sit, quietly marinating, for minimum ten minutes if possible. Now make four fat, juicy patties with your hands. The patties should be an inch thick, and soft in texture but not runny. Use the hottest area of the Flat-top, hot but not smoking. Sear the patties and fry the burgers about 3 minutes. Flip the burgers over, place a large Tbl spoon of India Relish on the top, add cheese if requested and cook another three minutes. Both sides of the burgers should be crispy brown and the middle pink and juicy. Add lettuce and tomato and a fried onion ring.

2INDIA RELISH Makes 2 jars 1 cucumber…peel, scoop out center, dice small. (Sprinkle with tsp of salt and let drain 10 min. in colander). 2 cups diced fresh tomatoes, dice and let drain with cucumber. ¼ diced onion (red or yellow) 1 Roasted red pepper, diced and drained. 3 heaping tbl spoons of Chicago green relish, 3 heaping tbl spoons of Major Grey Chutney. Jar and keep refrigerated. Do not make more than this amount at a time.
