lamb sliders with caramelized whisky onions
This recipe is super easy and fancy delicious! The onions don't taste of alcohol, since it is cooked off, but the nuance of the whisky is definitely there! The cheese is optional, and it usually only takes 4 slices of deli cheese to cover the 8 sliders.

- CARAMELIZED ONIONS:

2 lgsweet onions, sliced thinly

- BURGERS:

1 lbground lamb

8brioche slider buns

3 Tbspmayonnaise

baby arugula

How To Make lamb sliders with caramelized whisky onions

1Make the Onions: In a medium skillet over medium heat, (cast iron works best for caramelizing), melt the butter with the oil. Add the onions and stir to coat. Add a pinch of salt. Reduce heat to low. Cook until the onions are golden brown, stirring every few minutes. This will take about 20-25 minutes.

2Once onions are golden brown, remove the pan from the stove (to avoid flare ups!) and add the whisky. Return to the flame and cook until the alcohol burns off. Set aside.

3Make the Mushrooms: While onions are caramelizing, melt the butter with the oil in a separate skillet. Add the mushrooms and stir to coat. Cook until they are golden brown and have almost cooked off the excess moisture (about 7 minutes). Add the garlic and thyme and cook until the moisture is cooked off. Season with salt and pepper to taste. Cook for another 2 minutes, stirring frequently. Set aside.

4Start up your grill. Oil the grates lightly so the lamb burgers don't stick.

5NOTE: These cook so quickly, that I usually don't light up the grill. Instead I use a cast iron grill pan for half a recipe, or if making a full recipe I'll make the other half in a plain cast iron pan on the stove.

6Make the burgers: Place the lamb in a bowl and season with salt and pepper to taste. Form eight slider-sized patties with the meat. Brush the patties with oil and place them on the hot grill. Cook for about 2 minutes until browned on one side, then flip. Place cheese, if using, on top of the burgers. Cook an additional 1-2 minutes until done to your liking. It's lamb, so don't overcook! Remove to a plate.

7Slather mayo on all the buns. Place a bit of arugula on the bottom bun. Top with a burger. Top the burger with mushrooms. Top the mushrooms with caramelized onions. Add the top bun. Serve!
