1 lbboneless skinless thighs

2 Tbspbutter

1 Tbspolive oil

1/2 cdiced red or yellow pepper finely diced

1/2 conion finely diced

1/2 tsppoultry seasoning

1/4 tspred pepper flakes

3 clovegarlic minced

1/4 critz crackers crushed

1/4 cseasoned bread crumbs

1/4 cgrated parmesan cheese

1 tspsalt

1/4 cmayonnaise

2 Tbspfresh parsley finely chopped

1 tspdijon mustard

4 slicecheese your favorite

4buns

1/2 cshredded carrots

1/4 cwhite vinegar

mayonnaise for serving
How To Make chicken burgers with pickled carrots

1Cut the thighs into strips and place in food processor. Process until they are pea size pieces. Divide mixture in half.

2Melt 1 tbsp butter in frying pan and add the peppers, onions, red pepper flakes and poultry seasoning. Cook until softened then add the garlic and cook 30 seconds.

3Add half the ground chicken and cook until done. Set aside and cool completely.

4Meanwhile mix the carrots and white vinegar and set aside.

5In a large bowl add the cracker crumbs, bread crumbs, Parmesan, mayonnaise, parsley, salt, egg, and mustard. Add in the raw chicken and the cooked chicken mixture. Mix well, If the mixture is to wet add a little more cracker crumbs.

6Shape into 4 patties and place in fridge to let them firm up about 30 minutes.

7Place butter and oil in frying pan. Add the patties and brown on both sides flipping often. Use a probe thermometer to make sure they are at least 150 degrees

8Add a slice of cheese to each patty and place the lid over the patties until cheese melts.

9Drain the carrots and pat dry. Add the chicken burger to the bottom buns. Spread some mayonnaise on the top bun and add the pickled carrots.
