Inspired by a burger mentioned on a talk show, I came up with this to suit my family's tastes. Of course, you can adjust amounts of hot sauce and cayenne to your own taste. Also, you can cook them in a pan if grilling isn't your thing.

Ingredients For buffalo-style turkey burgers

1 lbground turkey

1/4 conion, minced

2 clovegarlic, minced or grated

2 tsphot sauce

1/2 tspdried thyme

1 tspkosher salt, or to taste

1 tspblack pepper, or to taste

1/2 tspred pepper flakes, or to taste
- CELERY - BLUE CHEESE RELISH

3 stalkcelery, thinly sliced

1/3 cred onions, thinly sliced

2 Tbspparsley, chopped

1 Tbspred wine vinegar
-
2 Tbspolive oil
-
1/2 tsplemon zest
-
1/4 cblue cheese crumbles

salt and pepper to taste
- SPICY SAUCE

1/2 cmayonnaise, light

2 tsplemon juice
-
2 tsphot sauce
-
1 1/2 tsphoney or agave
-
1/4 tspcayenne, or more, to taste
How To Make buffalo-style turkey burgers

1BURGER: Fold onions, garlic, hot sauce, thyme, black pepper, and chile flakes into ground turkey. Gently form 4 patties.

2Grill burgers on medium heat, 5-7 minutes per side. Lightly butter cut sides of buns and place on the grill for a couple minutes.

3RELISH: Combine ingredients in a small bowl. Either place on top of burger or use as a side.

4SAUCE: Mix all of the ingredients together. Spread on toasted burger bun.
