Ingredients For bison burgers with bourbon onion jam
- BURGERS

2 lbground bison
-
1/2 cpanko breadcrumbs (1/4 cup finely ground)
-
1 lgfree-range egg, beaten
-
1 Tbspsweet & spicy German mustard (substitute Dijon or stone-ground mustard)

ground Himalayan pink salt, to taste
-
freshly ground black pepper, to taste (I always use mixed peppercorns)
-
4hamburger buns
-
4 slicecheese
-
4lettuce leaves (such as boston)
-
4 slicebeefsteak tomato
- BOURBON ONION JAM
-
2 Tbspbutter
-
1 Tbspolive oil
-
2 cyellow onions, finely sliced (lyonnaise cut)
-
1/2 tspground Himalayan pink salt, or more to taste
-
1/2 tspfreshly ground black pepper, or more to taste (I always use mixed peppercorns)
-
1 lgclove garlic, pressed
-
1/3 cbourbon
How To Make bison burgers with bourbon onion jam
-
1To make the burgers, add the bison, panko, egg, mustard, salt and pepper to a large bowl. Mix (don’t overdo it) and evenly divide into 4 portions.

2Form 4 patties and place them on a plate. Cover with plastic wrap and transfer to the fridge for at least 2 hours and up to 8.

3When ready to cook, remove the patties from the fridge and allow them to get to room temperature, about 30 minutes.

4Meanwhile, in a large saucepan over medium-high heat, melt the butter and add the oil.

5Once hot, add onion slices, salt, and pepper; sauté for 2 minutes. Cover, reduce heat to medium and cook for 8 minutes, stirring frequently making sure the onion slices are well coated.

6Add garlic and sauté for 1 minute.

7Reduce to medium-low and continue cooking for another 10 minutes, uncovered, stirring often.

8Pour in bourbon, bring the heat to medium and cook about 10 minutes or until the liquid is almost evaporated, stirring every 2 minutes.

9Taste and adjust seasoning and keep it warm until needed.

10Preheat grill to 450ºF and oil grates.

11Place patties, close the lid and grill for 5 to 6 minutes per side or until internal temperature reaches 135ºF to 140ºF.
-
12About 3 minutes before they’re done, place hamburger buns, close the lid and grill them for 2 minutes.
-
13Top patties with a slice of cheese, close the lid and cook until the cheese is melted and the buns are nicely toasted.

14To assemble... Place lettuce on the bottom bun followed by the patty and then the bourbon onion jam on top before placing a tomato slice. Serve immediately…
