How To Make bison burgers with bourbon onion jam

  • 1
To make the burgers, add the bison, panko, egg, mustard, salt and pepper to a large bowl. Mix (don’t overdo it) and evenly divide into 4 portions.
  • 2
Form 4 patties and place them on a plate. Cover with plastic wrap and transfer to the fridge for at least 2 hours and up to 8.
  • 3
When ready to cook, remove the patties from the fridge and allow them to get to room temperature, about 30 minutes.
  • 4
Meanwhile, in a large saucepan over medium-high heat, melt the butter and add the oil.
  • 5
Once hot, add onion slices, salt, and pepper; sauté for 2 minutes. Cover, reduce heat to medium and cook for 8 minutes, stirring frequently making sure the onion slices are well coated.
  • 6
Add garlic and sauté for 1 minute.
  • 7
Reduce to medium-low and continue cooking for another 10 minutes, uncovered, stirring often.
  • 8
Pour in bourbon, bring the heat to medium and cook about 10 minutes or until the liquid is almost evaporated, stirring every 2 minutes.
  • 9
Taste and adjust seasoning and keep it warm until needed.
  • 10
Preheat grill to 450ºF and oil grates.
  • 11
Place patties, close the lid and grill for 5 to 6 minutes per side or until internal temperature reaches 135ºF to 140ºF.
  • 12
About 3 minutes before they’re done, place hamburger buns, close the lid and grill them for 2 minutes.
  • 13
Top patties with a slice of cheese, close the lid and cook until the cheese is melted and the buns are nicely toasted.
  • 14
To assemble... Place lettuce on the bottom bun followed by the patty and then the bourbon onion jam on top before placing a tomato slice. Serve immediately…
