even my husband who insists he doesnt like zucchini likes this

Ingredients For zucchini boats

  • snall to medium sized zucchini (2-3)
  • 1 1/2 lb
    lean ground beef
  • 3/4 c
    salsa
  • 1/2 c
    bread crumbs
  • 1 1/2 c
    shredded monterey jack cheese or pepper jack
  • 1/2tsp
    cumin
  • 1tsp
    chili powder

How To Make zucchini boats

  • 1
    cut zucchini in hald lengthwise. Scoop out inside leaving a 1/4 inch shell.icrowave for 3 min covered. Drain and set aside. Cook beef in skillet until no longer pink. Add salsa, bread crumbs and 1 cup of the cheese. spices

    fill zucchini shells. Microwave for 3 min.
  • 3
    top with remaining cheese and again microwave for 3 min. enjoy.
