Ingredients For zesty beef with bow ties

1 lbboneless sirloin steak

2 Tbspolive oil

1 lbfresh asparagus, cut into 2-inch pieces

1 mdonion, chopped

1/2 cbeef broth

4 ccooked farfelle pasta (bow ties)

1 can(15 oz.) tomato sauce (i buy diced tomatoes and blend them up)

3 Tbspfresh, lightly chopped basil leaves

3 Tbspcoarsly chopped sundried tomatoes

1/2 tspsalt
-
1/4 tsppepper
-
1/4 cgrated, fresh parmesan
How To Make zesty beef with bow ties

1Trim fat from sirloin. Cut beef across the grain into bite size cubes.

2Heat olive oil over medium heat. Saute onions until fragrant and crisp-tender.

3Add remaining olive oil to skillet. Add sirloin. Cook over medium heat, stirring frequently until meat is no longer pink.

4Return onions. Stir in remaining 1 cup of beef broth and crushed tomatoes. Simmer 10 minutes.

5Stir in cooked pasta.

6Plate, sprinkle with fresh basil, sun dried tomatoes, and Parmesan cheese. Serve.
