I hope you like this recipe, there are so many meatloaf recipes on here but mine might be a little different. This is my family's favorite way of having it.

Ingredients For zelda's cheesey meatloaf

  • 3 lb
    ground chuck [80-20]
  • 1 lg
    onion, chopped
  • 1/2 lg
    bell pepper, chopped
  • 3 lg
    eggs
  • 1/3 c
    ketchup
  • 1/3 c
    fresh garlic or granulated garlic
  • 1 tsp
    salt and pepper
  • 1/4 c
    cumin, ground
  • 1 Tbsp
    adobo
  • 1 c
    bread crumbs, italian
  • 1-1 1/2 c
    grated chesse [cheddar,jack, mozzerella]
  • TOPPING FOR MEATLOAF
  • 1/3 c
    regular mustard
  • 1/2 c
    ketchup
  • 1 c
    brown sugar

How To Make zelda's cheesey meatloaf

  • 1
    Combine the first 10 ingredients and mix them very well. Form into a loaf then make a well the whole length of the meatloaf. Put Chesse in the well and then close the well. Bake at 350 degrees for 45 minutes. Then mix the three ingredients and pour all over the meatloaf and bake another 15 minute. Sometimes I add 1 pound of pork to it and I wrap it in bacon sometimes. Still pour the sauce over the last 15 minutes of cooking. It is really good.
