Even if you're not a fan of ground turkey, you'll enjoy this easy weeknight meal. Between the taco seasoning, tomatoes with chiles, and salsa, this casserole has lots of flavor. Tortilla chips on top add a nice crunch. Using ground turkey makes this satisfying without being greasy or heavy.

Ingredients For yo turkey! notch-o lasagna

  • 1 lb
    ground turkey
  • 1/2 pkg
    taco seasoning mix
  • 1 can
    diced tomatoes with green chiles, divided (10.5 oz)
  • 1/2 tsp
    cayenne pepper
  • 1/2 Tbsp
    crushed red pepper
  • 4
    flour tortillas
  • 1 can
    refried beans (16 oz)
  • 1 c
    salsa
  • 1 1/2 c
    Mexican blend shredded cheese
  • handful of tortilla chips

How To Make yo turkey! notch-o lasagna

  • Brown ground turkey.

    Heat oven to 350 degrees F. Brown ground turkey in a skillet.
  • Add seasonings.

    Add all seasonings.
  • Add 2/3rd of the chopped tomatoes with chiles.

    Add 2/3 can of diced tomatoes with chiles.
  • Add the remaining diced tomatoes to a 9x13 baking dish.

    In a 9x13 pan, pour the remaining 1/3rd can of diced tomatoes with green chiles on the bottom.
  • Lay 4 tortillas in the baking dish.

    Lay all 4 tortillas on top of the tomatoes and chilies to cover the bottom and sides of the pan.
  • Spread the refried beans over the tortillas.

    Spread refried beans over all tortillas.
  • Spread salsa into the baking dish.

    Pour salsa over the layer of beans.
  • Add the ground turkey.

    Layer meat on top of the salsa.
  • Add the shredded cheese.

    Layer shredded cheese on top of the meat.
  • Bake for 15 - 20 minutes.

    Let bake for 15 to 20 minutes until the cheese is completely melted and the edges start to brown.
  • Top with slightly crushed tortilla chips.

    Remove from oven. Top with tortilla chips and place back in the oven.
  • Broil to brown the tortilla chips.

    Broil long enough to brown. Remove from oven and let sit for a few minutes. Eat and enjoy with a side of tortilla chips and Mexican rice.
