Even if you're not a fan of ground turkey, you'll enjoy this easy weeknight meal. Between the taco seasoning, tomatoes with chiles, and salsa, this casserole has lots of flavor. Tortilla chips on top add a nice crunch. Using ground turkey makes this satisfying without being greasy or heavy.

Ingredients For yo turkey! notch-o lasagna

1 lbground turkey
-
1/2 pkgtaco seasoning mix
-
1 candiced tomatoes with green chiles, divided (10.5 oz)

1/2 tspcayenne pepper
-
1/2 Tbspcrushed red pepper
-
4flour tortillas
-
1 canrefried beans (16 oz)
-
1 csalsa
-
1 1/2 cMexican blend shredded cheese
-
handful of tortilla chips
How To Make yo turkey! notch-o lasagna

1Heat oven to 350 degrees F. Brown ground turkey in a skillet.

2Add all seasonings.

3Add 2/3 can of diced tomatoes with chiles.

4In a 9x13 pan, pour the remaining 1/3rd can of diced tomatoes with green chiles on the bottom.

5Lay all 4 tortillas on top of the tomatoes and chilies to cover the bottom and sides of the pan.

6Spread refried beans over all tortillas.

7Pour salsa over the layer of beans.

8Layer meat on top of the salsa.

9Layer shredded cheese on top of the meat.

10Let bake for 15 to 20 minutes until the cheese is completely melted and the edges start to brown.

11Remove from oven. Top with tortilla chips and place back in the oven.

12Broil long enough to brown. Remove from oven and let sit for a few minutes. Eat and enjoy with a side of tortilla chips and Mexican rice.
