My husband decided to cook tonight and made this Mexican lasagna .. hope you all enjoy it as much as we did!

Even if you aren't a fan of ground turkey you will like this. Between the taco seasoning, tomatoes with chiles and salsa, this has lots flavor. The crunchy tortilla chips on top are a nice touch. If cooking for a family, you will want to double this recipe. It's delish!

Ingredients For yo turkey! notch-o lasagna

  • 1 lb
    ground turkey
  • 1/2 pkg
    taco seasoning mix
  • 1/3 can
    diced tomatoes with green chilies
  • 1/2 tsp
    cayenne pepper
  • 1/2 Tbsp
    crushed red pepper
  • LAYER THESE INGREDIENTS IN PAN
  • 4
    flour tortillas
  • 1 can
    refried beans
  • 2/3 can
    diced tomatoes with green chilies
  • 1 c
    salsa
  • 1 1/2 c
    Mexican blend shredded cheese
  • handful of tortilla chips

How To Make yo turkey! notch-o lasagna

    Heat oven 350 degrees. Brown ground turkey in skillet and add all seasonings, plus 2/3 can of tomatoes.

    In a 9x13 pan pour remaining can of tomatoes with green chilies on bottom. Lay all 4 tortillas on top of tomatoes and chilies to cover bottom and sides of pan. Spread refried beans over all tortillas, pour salsa over the layer of beans, layer meat on top of the salsa, layer shredded cheese top of meat.

    Let bake for 15 to 20 minutes until cheese is completely melted and edges start to brown. Remove from oven, top with tortilla chips place back in oven, broil long enough to brown. Remove from oven and let sit for a few minutes. Eat and enjoy with a side of tortilla chips and Mexican rice.
