This recipe is an adaptation from a stew my mom makes for me. Since I am a vegetarian of course it is meat free. I love it, my boyfriend loves it, even my sister who eats meat loves it.

Ingredients For vegetarian "beef" stew

1-1/12 pkgvegetarian beef substitute (i like gardein homestyle beefless tips)

1-3 lgpotatoes (any kind you have works)

3/4 ccarrots, chopped

1 cflour
-
2 tspground black pepper
-
1 tspgarlic powder
-
1 tsponion powder
-
1 mdonion
-
how ever much oil you feel is good for frying

2 tspminced garlic
-
2button mushrooms (optional)
-
1-1/2 pkghain vegetarain brown gravy mix
-
1-2 Tbspvegetable stock (i normally just do a splash)

1 pinchthyme, dried
How To Make vegetarian "beef" stew

1take beefless tips out of the freezer and let them thaw for a few min. When you can cut them in half, this makes more stew and I like smaller pieces.

2turn the oven up to 375

3cut up potatoes, carrots and onions and place in the pan you will be baking your stew in

4mix together flour,pepper,garlic powder,and onion powder into a bowl or bag which ever you prefer. Then put the chunks of "beef" into the bowl/bag and cover with flour.

5heat up oil in a small frying pan. The pan must be small!!!! Once the oil is hot fry up those yummy little "beef" tips. Once they are cooked place them in the pan that you will be baking your stew in. Dump any excess oil into the pan along with the "beef" (I never said this would be healthy) If using mushrooms sautee them after you fry the "beef" in the same pan

6remember that pan you used for frying well keep it out you are going to make the gravy in it according to package directions. Dump the gravy on top of all that goodness in your stew pan

7Now it's time to put in your thyme minced garlic and your vegetable stock. Mix that bad boy up

8Put in your oven for about 1hr and 15-30min. If you're not sure it's done poke a potato to see if it's soft

9Serve it how ever you want I like mine over rice or fresh biscuits but it's also good by itself
