This is a very basic meatloaf, but I am posting it in honor of my Uncle Dee, who passed away recently at the age of 79. It was his favorite meatloaf. Uncle Dee was the kindest, most non-judgemental person I have ever known. All of his life Dee had a severe stutter. As a child he was teased unmercifully by other children, so much so that my grandmother let him quit school at the age of 11, knowing that the emotional harm done him far outweighed the lack of schooling. Dee still struggled to talk as an adult; he eventually chose to just not talk at all. Here's to you, Sweet Dee!

Ingredients For uncle dee's meatloaf

  • 1 and 1/2 lb
    ground beef
  • 3/4 c
    quick cooking oats (uncooked)
  • 2
    eggs, beaten
  • 1/4 c
    chopped onion
  • 2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 can
    tomato sauce (8 oz)
  • 1/2 c
    catsup, divided

How To Make uncle dee's meatloaf

    Pre-heat oven to 350 degrees.

    Mix together thoroughly the ground beef, oats, eggs, onion, salt, pepper, tomato sauce and 1/4 cup catsup.

    Pack into a loaf pan, and cover the top with the remaining 1/4 cup catsup. Bake for 1 hour in a 350 degree oven.
