Ingredients For uncle andy's burritos

1 1/2 - 2 lbground beef
-
1 - 2medium onions, chopped

1 - 2garlic cloved, crushed
-
1 canpinto beans, drained and rinsed
-
1 cankidney beans, drained and rinsed
-
1green bell pepper, chopped
-
4whole jalapena peppers
-
4whole skinny hot peppers
-
2 cantomato sauce, 15 ounces each
-
cumin
-
tortillas, warmed
- FILLERS AND/OR TOPPINGS
-
cheddar cheese, shredded
-
guacamole and/or avocado slices
-
sour cream
-
salsa and/or diced tomatoes
-
shredded lettuce
-
hot sauce
How To Make uncle andy's burritos

1Brown together beef, onions, and garlic cloves. Drain.

2Meanwhile, drain and rinse the pinto and kidney beans. Combine in large sauce pan, the meat mixture, drained beans, all of the peppers and the tomato sauce. Cover the top with a good amount of cumin.

3Simmer for a couple of hours. During cooking time, pierce the peppers once they become tender.

4Before serving, remove the whole Jalapena and hot peppers. Cut them up into pieces and offer as filling/topping. Serve on warm tortillas with cheddar cheese and other fillings/toppings.
