1/4 cshallot, chopped

1 csmall mushrooms, halved (about 4 oz)

1/4 cdijon mustard, divided

2 Tbspa1 steak sauce

2 Tbspburgundy wine

1 Tbspparsley, chopped

4 slicebacon
-
4 4-ozbeef tenderloin steaks, about 1-in thick (tournedos)

1/4 tspcoarsely ground pepper
How To Make tournedos with mushroom wine sauce dijon

1In small saucepan, over medium heat, saute shallots in butter until tender.

2Add mushrooms; saute 1 minute.

3Stir in 2 tablespoons mustard, steak sauce, wine and parsley; heat to a boil.

4Reduce heat and simmer for 5 minutes; keep warm.

5Wrap bacon slice around edge of each steak; secure with toothpicks.

6Coat steaks with remaining mustard; sprinkle with pepper.

7Grill steak over medium heat for 10 to 12 minutes or to desired doneness, turning occasionally.

8Remove toothpicks; serve steak topped with warm mushroom sauce.
