- PIZZA DOUGH-FOR BREAD MACHINE

1 1/2 chot water

2 tspdry active yeast
- ENCHILADA SAUCE
-
10new mexico mild dried peppers
-
2 lgdried pasilla peppers

2 cbeef stock
-
2 tspea. of granulated garlic, onion and cumin

1/2 tspsalt
-
2 tsptomato paste
-
1/3 dashcanola oil
-
1/3 cmasa (corn flour)
- ADDITIONAL TOPPINGS

1 cdiced onion, opt

3-6 cgrated mexican cheese
How To Make thin crust beef enchilada pizza

1MEAT TOPPING: brown ground beef with granulated garlic, onion and cumin.

2SAUCE: Remove seeds and stems from dried peppers. Tear into pcs and place in a pot of water. Bring to boil, reduce to simmer. Simmer with lid on for about 15 min. Turn off heat and allow to sit for another 30 min or so.

3After sitting for a while, drain water. Place in food processor with 1 c of beef stock, 2 tsp of granulated garlic, granulated onion, cumin and 1/2 tsp of salt and puree. Run through a strainer to remove pulp.

4In a skillet place 1/3 c of canola oil, mix in 1/3 c of masa, stir to combine and heat for about 3-4 min.

5Add 2 tsp of tomato paste, stir together well, add pepper puree and 1 c of beef stock, stirring as it heats. You want to let it thicken up so leave on simmer till good and thick.

6DOUGH: Place liquids in bread machine pan, then dry ingredients, set to DOUGH ONLY cycle. When dough has risen, kneaded, rested and risen (about 1 1/2 hr)divide into three balls. Roll out on a cornmeal very thin.

7PIZZA: Spoon on enchilada sauce, sprinkle with cheese (I used a combo of Asadero and Cheddar)then ground beef, then onions. You can add more sauce or cheese as you layer it if desired.

8Bake on lowest rack at 425° for approx 20 min. Time will vary from oven to oven and depending on what rack you use, I used my second from bottom rack. This crust is very thin so it doesn't take very long to cook.
