the perfect easy goulash

My dad would make "goulash" which to him meant throwing in a pot whatever he could find to make a meal. It usually consisted of a pasta, meat, veggies and a sauce. I didn't have an official recipe from him so I just went on memory. Great w/ a crusty French bread or rolls.

Ingredients For the perfect easy goulash

  • 3 Tbsp
    light soy sauce
  • 2
    bay leaves
  • 2 Tbsp
    italian herbs, crushed
  • 1/2 Tbsp
    each, salt and pepper
  • 1 tsp
    garlic powder
  • 2
    15 oz cans diced tomatoes w/ italian seasonings
  • 2
    15 oz cans tomato sauce
  • 3 c
    beef broth
  • 1-1/2 tsp
    minced garlic
  • 2 lg
    onions, chopped
  • 2 lb
    lean ground beef or turkey
  • 2 c
    elbow macaroni
  • 1 c
    frozen mixed vegetables

How To Make the perfect easy goulash

    In lg pot over med-high heat, cook beef or ground turkey, using a large spoon to break up while cooking. If using beef, spoon off grease.

    Add onions and minced garlic. Saute for 5 mins. Add broth, tomato sauce, diced tomatoes w/ the juices, Italian herbs, bay leafs, soy sauce, garlic powder and salt & pepper.

    Stir in mixed veggies. Cover pot. Turn heat to medium. Cook 15 mins, stirring occasionally. Add macaroni, cover and simmer 15-20 mins or until pasta is tender. Turn heat off. Remove bay leaves. Let goulash sit for 10 mins.
