3/4 lbground beef

1/2 conion, chopped

1 cthick/chunky salsa

1 can11-oz. can mexicorn (corn, red and green peppers), undrained

4 ozcheddar cheese, shredded
How To Make tex-mex stuffed potatoes

1Bake potatoes at 400 degrees for 1 hour or until tender.

2In a large skillet over medium-high heat, brown ground beef until cooked through and add onion - cook an additional 5 minutes. Drain well.

3Stir in salsa and corn; cook until heated through - stir occasionally.

4To serve, split potatoes lengthwise and a smaller cut horizontally to allow potato to open fully. Top with beef mixture and sprinkle with cheddar cheese.
