Ingredients For tex-mex beef casserole

1.25 ccheese crackers, crushed

1 lbground round

1 Tbspchili powder

1/2 tspsalt

3eggs
-
2garlic cloves, minced

1 mdgreen bell pepper, chopped

1 mdonion, chopped

1 cangreen chiles, chopped

14 oztomatoes, peeled and canned Italian-style, drained

1 cancorn, cream-style

1 Tbspbutter
How To Make tex-mex beef casserole

1In large bowl, mix together 3/4 cup crushed crackers, corn, tomatoes, chiles, onions, bell pepper, garlic, eggs, salt and chili powder with a fork until well blended.

2Add ground round and knead with your hands until mixed; transfer to a lightly buttered, deep 3-quart baking dish.

3Sprinkle remaining 1/2 cup crackers over top and dot with butter.

4Bake in preheated 350-degree over about 1 hour, until center springs back when pressed with a finger.
