Make this dish and your house will smell awesome as it's cooking. This is a dish my mom would always make. Sometimes she would add garbanzo beans too. I left them out this time. I also added a few other ingredients that she didn't to enhance the flavors. Mom usually served with noodles. I served with creamy mashed potatoes. Delicious! Enjoy!

Ingredients For ~ tasty beef tagine ~

  • 5 tsp
    paprika
  • 2 1/2 tsp
    cinnamon
  • 1 1/2 tsp
    salt
  • 1 tsp
    red pepper flakes
  • 2 tsp
    garlic powder
  • 1 1/2 tsp
    ginger paste
  • 3/4 tsp
    pepper
  • 3 lb
    chuck roast, trimmed and cubed into 1 inch pieces
  • 3 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 2 - 3 Tbsp
    minced garlic or garlic paste
  • 29 oz
    diced tomatoes - include juice
  • 5 c
    peeled and cubed butternut squash
  • 1 c
    beef broth
  • 2 pinch
    saffron threads - optional

How To Make ~ tasty beef tagine ~

    In a large bowl, combine the paprika, cinnamon, salt, garlic powder, ginger, pepper flakes and pepper. Add the beef cubes and toss well to coat.

    In a dutch oven over medium high heat, add oil. Once oil is hot and shimmering - add the beef and onions. cook for 5 - 6 minutes stirring occasionally until meat is browned. Add the garlic and cook a few more minutes. Stirring frequently so as not to burn garlic.

    Stir in the broth and tomatoes and bring to a boil. Continue cooking for 5 minutes, then add the squash and saffron if using - cover and reduce heat to simmer - cook for 30 - 45 minutes or until squash and beef are both tender.

    I served mine along side of creamy mashed potatoes. Could be served with rice or noodles.
