This is a recipe taken from Southwest Cooking cookbook but tweaked to suit my family's taste.

Ingredients For tamale pie

1 Tbspoil

1onion, yellow, chopped

1 lbground beef

1envelope taco seasoning

1 canmexican style chopped tomatoes, undrained

1/2 cwater
-
1 canblack beans, rinsed and drained

1 canmexican corn, drained

1 pkgcorn bread/muffin mix

1 cshredded cheddar cheese
How To Make tamale pie

1Prepare corn muffin mix according to package directions, set aside.

2In skillet with oil, saute onion until tender, add ground beef and cook until beef is browned; drain excess oil.

3Add taco seasoning, tomatoes and water, simmer 5 minutes, stirring occasionally.

4Add black beans and corn and simmer for 10 minutes or until heated through.

5Turn mixture into a 2 quart casserole dish. Spoon corn muffin mix evenly over casserole. Sprinkle with shredded cheese. Bake at 400 degrees for 15 minutes or until muffin mix is golden and filling is bubbling. Serve with sour cream and salsa on the side.
