tailgate sloppy joe muffins
My mom gave me this recipe 27 years ago. And is affectionately known as "Sloppy Muffins" My family loves them and I always double the recipe to make 24 muffins! They are warm and hearty with gooey, cheesy awesomeness. . Super easy to transport and eat.No utensils required....just pick it up and literally eat it like a muffin "or a savory, meaty cupcake" A fotball sunday or tailgate favorite because they free up your other hand for.....well, lets just say a football sunday " beverage " !!!

Ingredients For tailgate sloppy joe muffins

1 lb1 lb 80/20 ground beef

1 8oz pkgshredded mozzarella

1 pkgmccormick enveolope of sloppy joe seasoning mix ( a generic store brand works just fine too)

1 8oz cantomato paste

2 cansgrands refrigerator biscuits
How To Make tailgate sloppy joe muffins

1Simply follow the directions on the back of the sloppy joe mix to prepare the 'sloppy joe meat" Once the sloppy joe is prepared, spray a 12 count muffin tin with non stick cooking spray Then stretch out a grand's biscuit to a disc shape ( just give it a few passes with the rolling pin) Proceed to mold the biscuit disc to the shape of the muffin tin. Continue to mold all the biscuit dough to fill all 12 muffins spots. Then fill the muffin tins with 2 heaping table spoons of sloppy joe meat. Sprinkle all sloppy muffins with the shredded mozzarella ( the more the merrier) Then bake according to the refrigerator biscuit directions.
