Out of all the taco meatloaf recipes I have tried, this one is hands down the best! My picky kids love it.

Mexican flavors and meatloaf?! You bet! We absolutely loved this dinner. This twist on meatloaf is perfectly moist and spicy. Easy to make, it tastes like a combination of a cheeseburger and a taco. If there are any leftovers, crumble the meat up and sprinkle over nachos. Yum!

Ingredients For taco meatloaf

  • 1 lg
    egg
  • 1/2 c
    sour cream
  • 1/3 c
    salsa
  • 3-4 Tbsp
    taco seasoning (store bought)
  • salt, to taste
  • 1 c
    crushed tortilla chips
  • 1/2 c
    shredded cheddar cheese
  • 2 lb
    lean ground beef
  • sliced tomato, chopped black olives, chopped green onion, shredded lettuce - optional toppings

How To Make taco meatloaf

  • Whisked egg in a bowl.

    In a large bowl, whisk the egg.
  • Remaining ingredients, except meat, mixed into the egg.

    Add all ingredients except ground beef. Mix well.
  • Ground beef mixed in.

    Add ground beef and mix well.
  • Mixture shaped into a loaf.

    Shape into loaf in baking dish.
  • Baked meatloaf on a baking dish.

    Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf.
  • Taco meatloaf on a serving platter with sliced tomato on top.

    While hot, place on a serving platter. Top with sliced tomato.
  • Grated cheese sprinkled on top.

    Then sprinkle grated cheese.
  • Platter covered in foil for cheese to melt.

    Loosely cover with foil so the heat from the meatloaf melts the cheese.
  • Taco Meatloaf ready to be sliced.

    Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream, and extra salsa to serve on the side or on top of the meatloaf.
