taco cups (kat's)

I know there is a lot of recipes out there and on here for taco cups, but here is my take on them, quick, easy and really yummy. Joe loved them and two of my nieces that stayed over with us did as well, got 2 thumbs up from them ( one even stopped texting to give me both thumbs lol)

Ingredients For taco cups (kat's)

  • 2 lb
    ground beef2
  • 2 pkg
    taco seasoning mix
  • 12 sm
    flour tortillas
  • 1/2 c
    salsa, chunky (mild,medium or hot your choice)
  • 1 c
    tomatoes,diced
  • 1/2 c
    sour cream
  • 1 c
    mozzarella cheese,shredded
  • 1 c
    cheddar cheese, shredded
  • 1/2 c
    guacamole ( optional)
  • cooking spray

How To Make taco cups (kat's)

    Preheat oven to 350. While oven is heating brown and drain the ground beef, add taco seasoning and 1/2 the water it calls for. Add salsa and let reduce down about 5 minutes.

    Warm tortillas in the microwave 3 at a time for 10 seconds, spray muffin cups with cooking spray, place each tortilla in a cup and shape into a bowl like. Lightly spray each one with cooking spray, fill each with beef and bake about 5 minutes or until the tortillas are a little crispy. Remove from oven and top with cheeses and let melt, top with sour cream, tomatoes and guacamole or any of your other favorite taco toppings.
