Needed something for a pot luck dinner, searched this site and found a taco bake recipe but I didn't have all the ingredients so I used that recipe as the foundation to create my own version and it was awesome!

Ingredients For taco bake

  • 1 lb
    ground beef, cooked
  • 1/2 md
    yellow onion, diced
  • 1 clove
    garlic, minced
  • 1 pkg
    taco seasoning mix
  • 1 can
    tomato sauce, medium size can
  • 1 can
    dark red kidney beans, drained
  • 1 can
    rotel diced tomatoes with green chilis, drained
  • 3 c
    slightly crushed tortilla chips
  • 1 pkg
    mexican blend shredded cheese

How To Make taco bake

    Preheat oven to 350.
  • 2
    Brown ground beef, add onion and garlic. Let cook until onions are tender.

    Add taco seasoning mix, tomato sauce, kidney beans and rotel tomatoes to skillet, let cook for 10 minutes.

    Spray casserole dish with non-stick spray. Spoon a layer of beef mixture into casserole dish, then add a layer of tortillas, then cheese. Repeat layers depending on how deep your casserole dish is, top layer should be cheese.

    Cover and place in oven, cook until cheese on top is melted and bubbly, approximately 15 minutes. Serve with a side of sour cream.
