I wanted to try a healthy version of shepherds pie. This dish is delicious!!! No guilt going back for more.

Ingredients For sweet potato sheperds pie

1 1/2 lblean ground beef (93-98%)

2 csweet onion, chopped

2 bagfrozen peas and carrots (16oz)

2 clovegarlic,minced

1/4 cunsalted beef stock

2 lbsweet potatoes, peeled and cubed

1 tspworcestershire

1 tspdijon mustard
-
1/4 ctomato paste
-
1 Tbspdried oregano
-
1 tspfine sea salt
-
1/2 tspblack pepper

How To Make sweet potato sheperds pie

1Peel and chop sweet potatoes in chunks. Cook in 2 cups water until tender.

2Chop onions. Mince garlic. Measure stock and tomato paste. Cook ground beef and onions until no longer pink. Add spices, stock, tomato paste, garlic, Dijon mustard, and peas and carrots. Cook until peas and carrots are thawed.

3Drain sweet potatoes. In medium bowl, add potatoes, 3/4 C half and half, 1 tsp fine sea salt, and 1/4 tsp black pepper. Mash until smooth.

4Spread meat mixture into a 13X9 baking dish. Top with mashed sweet potatoes. Sprinkle paprika on top.

5Bake in a 350 oven for 30 minutes or until edges are browned.

6Serve with tossed salad and garlic bread.
