If you find the veggie mixture needs more liquid once simmering, add a can of tomato sauce for liquid and flavor. If you'd like a more traditional-flavored chili, add more cumin and chili powder.

1In a large pot, start to saute the onion, bell peppers, jalapeno pepper, and garlic.

2Once the veggies are soft, add the remaining ingredients except the beef, beans, sour cream, and cheddar cheese.
