stuffed peppers ala pizzaiola

My husband doesn’t like traditional stuffed peppers. Since he’s Italian and loves Italian food. I decided to create a red stuffed Bell pepper, with Italian seasonings, and chopped tomatoes. They are baked in Marinara sauce and topped with mozzarella cheese. He loves them. I hope you all do too. Enjoy!

Ingredients For stuffed peppers ala pizzaiola

  • 7
    red bell peppers
  • 1 c
    chopped bell pepper from above. approximately one pepper
  • 1 lb
    85-90% ground beef
  • 1 c
    sweet chopped onion
  • 1/2 cup
    chopped baby bella mushrooms
  • 2 tsp
    dried basil
  • 1 tsp
    dried italian seasoning
  • 3
    roma tomatoes seeded
  • 1 c
    raw jasmine rice
  • salt and pepper to taste
  • 1/4 c
    parmesan cheese
  • 24 oz
    jar marinara sauce
  • 6 slice
    mozzarella cheese or 1 cup grated

How To Make stuffed peppers ala pizzaiola

    Cut tops off of peppers. Clean seeds out and trim light colored membranes out. Set aside.

    In a large skillet. Cook ground beef until Cooked through. Remove beef to a bowl and cover. Set aside.

    Add 2-3 TB olive oil to pan. Add in the onion, peppers, and mushrooms. Cook until browned and softened. Drain off juice.

    Add in the garlic. Stir for 1 minute. Add in tomatoes. Cook 2-3 minutes.

    Drain any juices from pan. Add the beef back to pan. Toss in basil, Italian seasoning, salt and pepper to taste.

    Cook 1 cup raw rice per package instructions.

    Add rice to beef mixture. Stir in parmesan cheese. Stuff peppers with mixture.

    In a 9x13 inch baking pan. Add the jar of Mariners sauce to bottom of pan.

    Place peppers right side up on top of marinara sauce. Cover pan with foil.

    Bake at 375 degree’s about 1 hour or until peppers are soft and tender.

    Remove foil from pan. Top peppers with some of the sauce from pan. Top with cheese. Bake until cheese is melted.

    Remove from oven. Serve with marinara sauce or ketchup.
