stuffed peppers
A northern Italian stuffed pepper recipe my grandmother made. A delicious accompaniment is small shell pasta with sautéed spinach in aioli.

Ingredients For stuffed peppers

1 lb.ground beef

1/4 smallonion chopped finely

1/2 tspsalt

1/2 tsppepper

I mediumeggplant

3bell peppers
-
1/2 cuppecorino romano cheese grated

3/4 cupbreadcrumbs
How To Make stuffed peppers

1Cut peppers in half and discard seeds and stem. Place in 9” X 13” baking pan.

2Peel eggplant and cut into chunks, put in pot, add water and cook until tender

3Place ground beef, onion, salt and pepper in large skillet and cook until onion is translucent and pink is gone from meat. Use a spatula to move meat around as it cooks.

4Drain tender eggplant and put in bowl, using an immersion blender, blend until smooth. Add to ground beef. Mix well. Add remaining ingredients and mix well.

5Spoon into halved peppers. Cover with foil and bake in 350 degree preheated oven for 30 minutes, then uncover and bake an additional 30 minutes.
