I came across this recipe in my daughters school cookbook that the parents and parishioners had put together. This is one that I have made several times. If you like stuffed peppers you won't be disappointed. I'm sure you can try this with cabbage also and change the name to Stuffed Cabbage Soup!

Ingredients For stuffed pepper soup

  • 2 lb
    ground beef
  • 1 -29 oz
    can tomato sauce
  • 1 -29 oz
    can diced tomatoes,undrained
  • 2 c
    cooked long grain white rice
  • 2 c
    chopped green bell pepper
  • 2
    beef bouillon, cubes
  • 1/4 c
    packed brown sugar
  • 2 tsp
    salt
  • 1 tsp
    pepper

How To Make stuffed pepper soup

    In a large saucepan or Dutch oven,brown beef; drain. Add remainng ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender.
