stuffed bacon pizza meatloaf

This was started by my son. He wanted me to make meatloaf, but use mozzarella cheese. I took it to the next level. ;)

Ingredients For stuffed bacon pizza meatloaf
- MEATLOAF

2 lbground beef

1egg
-
1envelope onion soup mix
-
garlic powder
-
oregano
-
basil
-
parsley

1 cmozzarella cheese, shredded, divided

4strips bacon, partially cooked

1/2 cpizza sauce (below)
- PIZZA SAUCE

114 oz. can diced tomatoes

1 cantomato paste
-
italian seasonings (garlic, oregano, basil, parsley)

2 tspsugar

parmesan cheese
How To Make stuffed bacon pizza meatloaf

1Combine all Pizza Sauce ingredients in a saucepan. Simmer for 2-3 hours to bring out the sweetness in the tomatoes. Then set aside to use in the rest of the recipe.

2Mix all meatloaf ingredients in a large bowl. Take 1/2 of the meat mixture and mold it onto an oval shale in a pan. Make an indentation across the top of this, leaving raised edges.

3Fill indentation with 3/4 cup shredded mozzarella cheese.

4Take remaining meat mixture and cover the top of the meatloaf, making sure to seal in the mozzarella.

5Top the meatloaf with the bacon. (I cut the strips in half, making 8 pieces, to fit the loaf better)

6Cover the top with more pizza sauce, saving some sauce to put over the meatloaf on the plate. Cover with foil and place in 350 degree oven (or this can be cooked on a grill over indirect heat) for 1-1 1/2 hours, or until meatloaf is cooked through.

7Remove foil & top with remaining shredded mozzarella. Bake until cheese is melted.
