I have been making stir fry for ages what makes this so special is the sauce, courtesy of the Food Network magazine. The combo of ingredients as well as the marinade is what makes this special.

Ingredients For stir fry beef and broccoli in brown sauce

3/4 lbflank steak thinly sliced against the grain

marinade:

1 lgegg white
-
1 Tbsprice wine vinegar

1 Tbspcorn starch
-
brown sauce:
-
1/2 cchicken broth
-
1 Tbspcornstarch
-
1 Tbspsoy sauce
-
1 Tbsphoisin sauce
-
1 Tbsprice wine vinegar

3 cveggies of your choice, broccoli of course, sliced celery, sliced , bell peppers, 1 inch pieces of scallions, onions, mushrooms, bok choi, and also 1/4 cup peanuts

2 cloveminced garlic
-
1 tspminced ginger
-
2 lgscallions, minced green parts too

pincheach salt and sugar
How To Make stir fry beef and broccoli in brown sauce

1Marinade meat at least one hour. Drain excess marinade off beef when ready to cook.

2Place sauce, meat and veggies right by the stove, this goes fast.

3Heat 1/4 inch of peanut oil in a wok or skillet over med high heat.

4Add the beef, cook until nicely browned, remove from pan, cover and keep warm, wipe out pan.

5Add 2 tablespoons of oil to pan, heat to med high. Add 2 cloves of minced garlic, 1 teaspoon minced ginger, salt, and 2 minced scallions. Stir fry about 30 seconds.Add pinch salt and sugar.

6Add veggies starting with the ones that cook the longest. Stir fry til crisp tender.

7Add the beef and sauce, and stir until everything is hot,and sauce thickened.

8Serve with hot cooked rice.
