3/4 lblean beef

1 tspsugar

1/4 tspsalt

2 tspdark soy sauce

1/2 tspground szechuan peppercorns

1 Tbsporange peel, slivered

2dried red chile peppers, broken into pieces

1/3 cpeanut oil
-
1 tspsesame oil
-
1 tspcornstarch
-
1 tspginger root, peeled piece, finely chopped

2 tsprice wine
-
2 tspdark soy sauce

1/2 tspsesame oil
How To Make stir fried beef with orange

1CUT THE BEEF into thin slices 2 inches long, cutting against the grain.

2Put the beef into a bowl together with the soy sauce, rice wine or sherry, ginger, cornstarch and 1 teaspoon of sesame oil.

3Mix well, then let the mixture marinate for about 20 minutes.

4Heat the oil in a wok or large skillet until it is very hot.

5Remove the beef from the marinade with a slotted spoon.

6Add it to the pan and stir-fry it for 2 minutes until it browns.

7Remove it and leave to drain in a colander or sieve.

8Pour off most of the oil, leaving about 1 teaspoon.

9Reheat the pan over a high heat and then add the dried chiles.

10Stir-fry them for 10 seconds, and then return the beef to the pan.

11Add the rest of the ingredients and stir-fry for 4 minutes, mixing well.

12Serve the dish at once.
