This sandwich is a huge hit with my family around saint patricks day. Its a bit more expensive then some lunchmeats, but corned beef is usually on sale that time of the year. Its a new take on the classic rueben (especially if you dont like saurkraut).

Ingredients For st patricks day sandwich

  • 1/2 lb
    corned beef (sliced)
  • 4 slice
    swiss cheese
  • 4 slice
    bread and butter pickles (large)
  • 1
    loaf italian bread
  • 1 tsp
    butter
  • thousand island dressing

How To Make st patricks day sandwich

  • 1
    Heat greased frying pan on high.
  • 2
    Slice the italian loaf into thick slices. Butter both sides of each slice.
  • 3
    Assemble sandwiches (corned beef, swiss cheese and then pickles) and place in hot frying pan. Flip when golden brown.

    Cook to a grilled cheese consistancy. Slice diagonally and enjoy. Dip in thousand island dressing if desired)
