The original recipe came from the Prevention.com recipe site, Low Cost, Low Fat Freezer Cookbook. I made my own breadcrumbs in the blender, used homemade salsa, and precooked the chopped onions and corn for 1-2 minutes in the microwave before adding to the meatloaf mix. The seasoning blend is my own. If baked in mini bread pans, these only take 30 minutes to cook. Move over, Rachel Ray!

Ingredients For southwestern style meatloaf

  • 1 lb
    extra-lean ground beef round
  • 1/2 lb
    ground turkey
  • 3/4 c
    salsa
  • 3/4 c
    soft bread crumbs
  • 1 c
    chopped onion
  • 1/2 c
    whole kernel corn
  • 2 lg
    eggs, lightly beaten
  • 2 clove
    garlic, minced
  • 2 tsp
    chili powder
  • 1 tsp
    ground cumin
  • 1/4 tsp
    black pepper
  • 1/8 tsp
    salt
  • 1/4 c
    tomato sauce
  • 1 Tbsp
    ketchup
  • 1 tsp
    brown sugar

How To Make southwestern style meatloaf

    Preheat oven to 350°F. Lightly grease a loaf pan, or 3 or 4 mini loaf pans. You may pre-cook the chopped onions and corn kernels in the microwave for 1-2 minutes if you like; this is supposed to help the meatloaf retain its "slice-ability." I like the flavor of the precooked vegetables.

    In a large bowl, combine the beef, turkey, salsa, bread crumbs, onions, corn, eggs, garlic, chili powder, cumin, pepper, and salt. Mix well. Form into a loaf and place in the prepared loaf pan. May also be divided evenly into 3 or 4 mini loaf pans.

    In a small bowl, combine the tomato sauce, ketchup, and brown sugar. Spread over the top of the meat loaf. Cover with foil and bake for 1 hour, or until a meat thermometer reads at least 160°F. Uncover and bake for 5 minutes more, or until the top browns slightly. Let stand 10 minutes before slicing.

    If using mini loaf pans, they only take a total of 30 minutes.

    Recipe Notes To freeze, remove the cooled cooked loaf from the pan. Wrap with a double layer of freezer-quality foil. To use, thaw overnight in the refrigerator. Bake the foil-wrapped loaf at 350°F for 20 minutes, or until hot.
