Ingredients For southwestern-style beef stew

2 lbbeef chuck roast, cut into 1 1/2 inch pieces

1 lgonion, diced

2garlic coves, minced

1 1/2 cbeef broth
-
1/3 Tbspdried parsley flakes

1 tspground cumin
-
1/2 tspsalt
-
3carrots, sliced
-
1 1/2 canrotel diced tomatoes and green chilies

1 can14.5 oz. can whole kernel corn, drained (can use frozen corn)

3zucchini squash, diced
-
1 can14.5 oz. diced tomatoes (optional)
How To Make southwestern-style beef stew

1Spray interior of crockpot with vegetable spray.

2Brown roast on both sides in a skillet.

3Place all ingredients in crockpot except zucchini. Cok on low 4-5 hours or until done to your liking.

4One hour before the end of cooking time, stir in diced zucchini.
