Ingredients For southwest stuffed peppers

  • 1 lb
    lean ground beef
  • 1 c
    cooked rice
  • 3 c
    link italian sausage caseing removed and chopped up
  • 3/4 c
    red sweet peppers diced small
  • 1
    onions diced small
  • 1 Tbsp
    minced garlic
  • 1 c
    chopped seeded tomatoes
  • 1 Tbsp
    chili powder
  • 1 tsp
    cornstarch
  • 2 Tbsp
    ground cumin
  • 1 tsp
    dried oregano
  • 1 c
    tomato sauce

How To Make southwest stuffed peppers

  • 1
    Cut 4 peppers lenth wise and clean out the seeds. Blanch the peppers in boiling water for 4 minutes. Pull them out and let them cool. Mix all the ingredients except the tomato sauce. Fill each half of the peppers in a high hill of the pepper place a couple of table spoons of tomato sauce over the top of the beef mix and bake at 350 degrease adding a little sauce over the top as it cooks, until the Filling is cooked. Enjoy.
