You can serve this versatile roast with tortillas, taco shells, over tortilla chips, or rice. Saffron rice is my favorite foundation for its tender goodness.

Ingredients For southwest pot roast

  • 3 lb
    beef roast
  • 1 can
    diced tomatoes
  • 1 can
    ranch style beans
  • 4 oz
    chopped green chilies
  • 1 md
    onion, chopped
  • 2 tsp
    chili powder

How To Make southwest pot roast

    Rinse roast and place in slow cooker.

    Combine remaining ingredients in a separate bowl. Pour over roast.

    Cook on low for 6 hours.
  • 4
    Remove roast to a platter and shred with a fork.
  • 5
    Return meat to slow cooker and mix with sauce.
  • 6
    Serve with sour cream and cheese over tortillas, taco shells, rice, or tortilla chips.
