My family loves these. I like using the flaky biscuits. You can use any ground meat with this and depending on the meat you might have to add upto a cup of salsa.

Ingredients For southwest muffin cups

  • 1 lb
    ground beef
  • 3/4 c
    thick and chuncky salsa
  • 1 pkg
    (16.3 oz)canned buttermilk biscuits
  • 3/4 c
    shredded cheddar cheese

How To Make southwest muffin cups

  • 1
    Brown ground beef in medium skillet,drain. Add salsa and bring to a boil. Reduce heat and simmer while preparing the buscuits.

    On a cutting board or smooth surface, pat each busicuit into a 5 inch circle. Spray cooking spray in 8 of the muffin cups. Press biscuits into each one, pressing well onto bottom and up side of each cup, extending over the top a little.

    Spoon equal amounts of ground beef mix into the muffin cups. Bake 10-12 min or until the biscuts are golden. Top with Cheese once out of the oven, cheese will melt from the heat of the meat.
