If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

Ingredients For smoked summer sausage pasta salad

4 ccooked pasta

2 csmoked summer sausage, cubed

1red bell pepper, roasted

1poblano pepper, roasted

1/2 cdiced onion

1 1/2 cgrated cheddar, 2%

1/2 tspblack pepper

1 csour cream, lite
How To Make smoked summer sausage pasta salad

1Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.

2Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.
