I have been making this stew for 25 years. I have tried many recipes, but this is my very favorite. Toss the ingredients together in the morning and coming home to the aroma of comfort food. It goes so well with fresh French bread and a green salad. (The photo featured is the dish PRIOR to cooking. We ate the finished result before I had a chance to take a picture!)

1 1/2 lbbeef stew meat

1 mdonion, chopped

4 lgcarrots, peeled and cut into 1 inch pieces

2ribs celery, cut into 1 inch pieces

4 mdpotatoes, peeled

1 cantomatoes, diced and undrained

1 canbeef broth, 10 1/2 ounces

1 Tbspworcestershire sauce

1 Tbspparsley flakes

1 tspthyme leaves

1 lgbay leaf

1 tspsalt

1/4 tsppepper

2 Tbsptapioca
How To Make slow cooker beef stew

1Brown beef cubes in skillet over medium heat. Transfer meat into crockpot.

2Add remaining ingredients. Cover and cook on low for 4-5 8 hours or on low for 4-5 hours.

3If you'd like a thicker stew, add a tablespoon or two of cornstarch mixed in a small amount (about 1/4 cup) of water and add to stew about 15 minutes prior to serving. This should thicken it.
