I wanted to surprise my husband with a nice dinner because he's been so kind to me while I'm having a tough time with my personal health. I looked for a recipe for roast beef and I couldn't' find one that interested me. So I created this recipe. My husband enjoyed it and since he enjoyed it, so did I. It's simple but elegant at the same time.

Ingredients For slow cooker beef chuck roast with veggies

  • 3 lb
    beef chuck roast
  • 4 md
    yellow onions, quartered
  • 10 sm
    red potatoes, whole
  • 1 bag
    baby carrots
  • 1/4 c
    worcestershire sauce
  • 2 Tbsp
    black pepper, evenly distributed
  • 2 Tbsp
    fine sea salt, evenly distributed
  • 2 Tbsp
    garlic powder, evenly distributed
  • 1 Tbsp
    ground mustard, evenly distributed
  • 1 Tbsp
    dried rosemary, crushed and evenly distributed
  • 2
    beef bouillon, cubes
  • 3 1/4 c
    water

How To Make slow cooker beef chuck roast with veggies

    Brown roast in 2 Tbsp. canola oil. When done, set aside on plate.

    Cut onions into quarters and add to 6 qt. slow cooker.

    Add potatoes and bouillon cubes to slow cooker
  • 4
    Evenly distribute seasonings on the roast.

    Add roast to slow cooker.

    Add carrots around the roast.

    Add water around the roast and veggies,

    Cover and cook on high for 6 hours.
