2 Tbspolive oil

3 lbstew beef cubes

salt & pepper to taste

1 cburgundy wine or preferred red wine

1/2 cbeef broth
-
1 ctomato sauce
-
1/4 call purpose flour
-
3 clovegarlic, minced
-
1 tspground thyme
-
5carrots, cut into 2 inch pieces, diagonally or whole baby carrots

1 lbbaby new or fingerling potatoes, scrubbed, not peeled
-
1 pkg(8 oz.) fresh mushrooms, cleaned and sliced

2-3 Tbspfresh chopped parsley
How To Make slow cooker beef burguignon

1Heat olive oil in skillet.

2Sprinkle beef with salt and pepper, then add to a skillet and brown.

3Add flour to drippings stirring until smooth and combined. Add wine to the skillet. Simmer until wine is reduced by half, then add beef broth, and tomato sauce. Remove from heat. Add the sauce to the slow cooker.

4Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Stir to combine and cook on high high for 4 hours or low for 8 hours. Add more salt and/or pepper if needed.

5Plate, garnish with fresh parley and serve!
