I wanted to make a roast, but w/ some "kick" to it, so I added cajun seasoning and hot sauce. The peppers give it a great color and taste.

Ingredients For slow cooked cajun pot roast w/peppers

2-1/2 lbboneless beef chuck pot roast, trimmed of any fat

1 Tbspcajun seasoning

1 Tbsphot sauce
-
1/8 tsppepper
-
114-1/2 oz can diced tomatoes w/ chiles

1 lggreen bell pepper, cut into strips

1 lgred bell pepper, cut into strips

1 lgyellow bell pepper, cut into strips
How To Make slow cooked cajun pot roast w/peppers

1Sprinkle cajun seasoning over meat, rub in w/ fingers. Place meat in a 4-quart slow cooker. Add hot sauce and pepper.

2Pour undrained tomatoes over meat. Cook on low for 8 hrs, or on high for 5 hrs, adding pepper strips the last 30 mins of cook time.

3Transfer meat to a cuuting board, slice meat, place on a platter. Using a slotted spoon, remove peppers, place on top of meat.
