Ingredients For sloppy joe potato skins

  • 6 lg
    russet potatoes scrubed
  • 1 md
    onion diced
  • 4 clove
    garlic minced
  • 1 lb
    ground beef
  • 1 c
    ketchup
  • 1/3 c
    brown sugar
  • 2 Tbsp
    dijon mustard
  • 1 Tbsp
    worcestershire sauce
  • salt and pepper
  • 1 c
    shredded cheddar cheese
  • fresh chives for garnish

How To Make sloppy joe potato skins

    Preheat oven 400 degrees. Prick the potatoes and bake for 1 hour or until done. Let them cool.

    Meanwhile Add some oil to a large skillet. Add the onion and garlic and cook 1 minute. Add the burger and cook until no longer pink.

    Add the ketchup, brown sugar, mustard, Worcestershire sauce and salt and pepper. Cook until warmed through. Cut the potatoes in half and scoop out the potatoes leaving about 1/4 inch border.

    Fill each of the potato skins with the beef mixture. Top with cheese and green onions. Serve with sour cream if desired.
