We eat BIG in this house! For tonight's dinner it was a unanimous "Shepherd's Pie!" It's warm, filling, EASY, fast to make, cheap, and tastes great! How could I say no?

Ingredients For shepherd's pie - the cheap way!

  • 2 lb
    browned ground beef (sausage if you're feeling frisky)
  • 1 box
    instant mashed potatoes
  • 2 can
    mixed vegetables (14.5 oz) or 1 small mixed bag frozen
  • 2 can
    cream of mushroom soup, undiluted (14.5 oz)
  • 1 pkg
    grated cheese

How To Make shepherd's pie - the cheap way!

    Preheat oven to 375 degrees F. Brown the hamburger and make 6-8 servings of instant potatoes (follow the box instructions).

    Drain grease from hamburger then mix in mixed vegetables and cream of mushroom soup.

    Pour meat/veggie/soup mix into a 13x9 inch pan and spread around evenly.

    Spread grated cheese evenly over meat/veggie/soup mixture.

    Spoon mashed potatoes evenly over cheese layer.

    Add more grated cheese over mashed potatoes.

    Cover with tin foil and bake for 30 minutes (long enough for it to melt the cheese and be hot all the way through).

    We like to serve it with simple cornbread. Scoop it out with a large spoon or spatula.
