We eat BIG in this house! For tonight's dinner it was a unanimous "Shepherd's Pie!" It's warm, filling, EASY, fast to make, cheap, and tastes great! How could I say no?

Ingredients For shepherd's pie - the cheap way!

2 lbbrowned ground beef (sausage if you're feeling frisky)

1 boxinstant mashed potatoes

2 canmixed vegetables (14.5 oz) or 1 small mixed bag frozen

2 cancream of mushroom soup, undiluted (14.5 oz)

1 pkggrated cheese
How To Make shepherd's pie - the cheap way!

1Preheat oven to 375 degrees F. Brown the hamburger and make 6-8 servings of instant potatoes (follow the box instructions).

2Drain grease from hamburger then mix in mixed vegetables and cream of mushroom soup.

3Pour meat/veggie/soup mix into a 13x9 inch pan and spread around evenly.

4Spread grated cheese evenly over meat/veggie/soup mixture.

5Spoon mashed potatoes evenly over cheese layer.

6Add more grated cheese over mashed potatoes.

7Cover with tin foil and bake for 30 minutes (long enough for it to melt the cheese and be hot all the way through).

8We like to serve it with simple cornbread. Scoop it out with a large spoon or spatula.
